Bulgogi is easily one of the most recognizable Korean dishes in Korean restaurants overseas. The name bulgogi literally means ‘fire meat’, derived from the Korean root words ‘bul’ for fire and ‘gogi’ for meat.
It’s been in the Korean food tradition for a very long time, dating back in the Goguryeo period and carrying a name different from what is currently known. This delicious, classic Korean dish was originally from the region of Pyongan in North Korea, but it made its way through the South post-Korean War and has long since gone global.
The best cuts, sirloin or tenderloin, are marinated in soy sauce, sugar and the juice of the Korean pear – and then cooked over charcoal fire. Elsewhere in the world, there are several ways of cooking barbecue, but cooking this over charcoal is touted as the best of all the possible ways. Imagine the bulgogi smell wafting through your kitchen – that would surely attract a crowd.
