Bibim-guksu is simply spicy mixed noodles but quite a delightful Korean food overall with very minimal effort required. It’s officially recognized as a summer food in Korea, chilled when served and essentially just gochujang, kimchi and somen – sometimes a hardboiled egg when you’re really feeling it.
The sauce is very much celebrated on its own as it’s spicy, sweet and sour which provides a dynamic eating experience. There’s no worry with the kimchi smell too, since overall the gochujang, sesame oil and vinegar temper the worrisome kimchi smell (that is, if you’re ever planning to take this to work for lunch). Take a good look at your somen noodles though; since they’re very thin, it’s easy to burn them (yes), and to overcook them.
